Recipe: Portuguese Cod Bake

Cooking for one if you’ve never done it before comes with its challenges. Coming up with ideas for new dishes isn’t always easy, a lot of recipes call for fancy, expensive ingredients and more often than not, they’re designed for a family of four. That’s why we’re running a series here on the Trent Freshers’ Blog of recipes that are student-budget friendly and easy to make.

First up is one from the Executive Team Cook Book, a Portuguese Cod Bake.

Ingredients
  • 1 cod fillet
  • 1 pepper
  • 1 onion
  • Handful of tomatoes
  • Handful of olives
  • Pinch of salt
  • Pinch of pepper
  • ½ can of butter beans
  • 500g passata
Method

Heat the oven to 200 degrees C.

Put the peppers, onions, tomatoes and olives into a large, deep baking tray and cook for 15 minutes until they start to soften and char at the edges

Stir in the passata, butter beans, salt and pepper and make a little well to nestle the cod into.

Return to the oven and cook for a further 15 minutes until the cod is cooked through.

Garnish with basil and serve with crusty bread to finish.
